That's a Wrap (or two)!


(Another guest post from my husband.  They're a great snack or light lunch.)

I usually have two wraps at a time, and I usually make them both at the same.  Today I felt like mixing it up, and making one with hummus and one with guacamole.  Both are super easy.

That’s a Wrap (or two)!

Ingredients:
1 tortilla
1 oz white cheddar (or another cheese that melts well)
Lettuce (I use a mix of baby spinach and spring mix.)

Method:
Start with a tortilla, flat on your plate.  

Shred or crumble 1 oz of white cheddar on one half of the tortilla.

Fold the tortilla over to close it, and microwave for 30 seconds.   If the cheese isn’t melted, nuke it some more.

Spread 1.5 oz of hummus or guacamole on top of the melted cheese.  


The picture on the left is with guacamole, and the picture on the right is with hummus.  That's the only difference between these 2 wraps, but this one change gives them each a completely different taste.






Pile on the lettuce, as much as will fit.

Roll it up.  You might want to roll the wrap so the overlapping ends are on the bottom.  That way, the weight of the wrap can keep it from unwrapping.

Cut each wrap in half, and dig in!
